About This Wine

Winemaking
The Red Blend is made from Petite Sirah sourced from sustainably farmed Lodi vineyards and aged for 14 months in French oak barrels before undergoing gentle alcohol removal. The result is a naturally lighter-bodied red, structured yet refined, with integrated tannins, subtle oak, and layered notes of cassis, herbs, and cocoa.

Before bottling, a small amount of custom botanical extract is added to restore depth and balance. Developed with Ian Blessing of All The Bitter, the blend of whole botanicals enhances the wine’s natural character, bringing added dimension through dark fruit, warm spice, and a touch of herbal lift.

What does <0.5% ABV mean?
Because our wines are fermented before the alcohol is removed, the FDA requires us to label them as <0.5% ABV. In practice, they contain less alcohol than what’s naturally found in everyday foods, like a ripe banana (~0.4% ABV) or a glass of orange
juice (~0.7% ABV)..

Tasting Notes
A lighter-bodied red with elegant structure and a smooth, integrated finish. Notes of cassis, dark cherry, and blueberry lead, layered with cocoa, subtle oak, and dried herbs. Hints of warm spice, mint, and sage add lift and freshness, bringing balance and complexity to the glass.

How we build the red

Why a botanical extract goes into our red

Before bottling, we add a small amount of a custom botanical extract to restore depth and balance. We developed it with Ian Blessing, founder of All the Bitter, as a blend of whole botanicals. The extract adds dark fruit, warm spice and a touch of herbal lift.

Ian was a sommelier at The French Laundry in Napa Valley. With his wife and fellow somm, Carly, Ian co-founded All The Bitter, which makes alcohol-free cocktail bitters by hand in Chico, California, from whole organic plants. Ian developed the botanical formulation in our Red Blend with us.

What is the botanical extract in Tomorrow Red Blend?

A blend of whole botanicals we developed with Ian Blessing of All the Bitter. Before bottling, we add a small amount to Tomorrow Red Blend to restore depth and balance. The extract adds dark fruit, warm spice and a touch of herbal lift.

Does the extract change how Tomorrow Red Blend tastes?

Yes. The extract adds dark fruit, warm spice and a touch of herbal lift.

Why is Tomorrow Red Blend lighter in body than a full-strength red?

Alcohol gives a red wine much of the weight in the glass. We keep Tomorrow Red Blend lighter in body on purpose, with integrated tannins, subtle oak, and notes of cassis, herbs and cocoa.

“This non-alcoholic red wine legitimately smells like real wine. On the nose there are big juicy notes of dark cherry, leather and spice just like a complex red wine.”

Questions

How is the alcohol removed from Tomorrow?

For the current vintage we use vacuum distillation and a spinning cone column. Under vacuum, the alcohol distills out at temperatures that leave the flavors and aromas in the wine. The spinning cone finishes the job quickly, so the wine spends less time near heat.

Are Tomorrow wines alcohol free?

Our methods leave a small amount of residual alcohol after we remove the rest. Less than 0.5% alcohol by volume, as every label states. In practice, this is about as much alcohol as exists in a ripe banana.

How should I store Tomorrow?

Keep unopened bottles at room temperature, in the pantry or a wine rack. Once you open a bottle, keep the wine in the fridge.

Can I cook with Tomorrow?

Yes. Tomorrow adds flavor to a dish. Without the alcohol, our wines may behave differently in the pan than full-strength wine, so taste as you go.

Does Tomorrow contain sulfites?

Yes. All wines contain some sulfites that occur naturally. We add a small amount more after the alcohol is removed, to protect each wine. Every label lists sulfites.

How long does an unopened bottle keep?

We recommend drinking each Tomorrow wine within 18 months.
