Yes, this is really wine! Tomorrow Cellars wines start in the vineyards of Northern California where our growers adhere to sustainable farming practices. Once the grapes are harvested, they are pressed and fermented and carefully vinified into delicious wine. We chose to ferment in stainless steel tanks to create fresh and lively white wines. Once the fermentation is complete the wines are “de-alcoholized”, gently removing the alcohol while retaining the flavors, aromas and other characteristics we want to preserve to deliver fresh, crisp delicious WINE!
We use a few different technologies – we are continuously improving our process and pride ourselves in innovation. For the current vintage of Tomorrow Cellars utilized vacuum distillation and spinning cone column. Two methods that allow the alcohol to be removed with a combination of evaporation (the vacuum allows us to “distill” out the alcohol at temperatures that won’t affect the flavors and aromas) and the spinning cone column completes this process more quickly, limiting the time the wine is exposed to heat. The alcohol is stripped away as the wine moves down through the column.
Our current methods leave a small amount of residual alcohol, less than 0.5% ABV (alcohol by volume), about the same percentage by volume as orange juice. If you are pregnant, have a health condition, or cannot consume alcohol for any reason, please check with your healthcare provider before enjoying our wines.
Only 20 calories per 5 oz glass, which is 80% less than in a traditional glass of alcoholic wine.
Until they are opened, these wines can be stored at room temperature in your pantry, on the counter, in a wine rack, or wherever convenient. Once opened, please refrigerate to preserve freshness.

No, we use a little varietal grape juice (about 2% by volume) to complement the wine, giving Tomorrow Cellars wine a sense of sweetness on the palate. We make wines we like to drink and feel good about serving.

Oh, you mean IN the food? These wines will add some flavor to the dish, but without the alcohol, they may perform differently than traditional wine so you may need to experiment a little bit.
Yes, all wines contain some naturally occurring sulfites. We also add a small amount of additional sulfites during processing to protect the wines after removing the alcohol.
Wine, including Tomorrow Cellars, is meant to be enjoyed and shared, so don’t hold on to it forever! That said, 18 months is the recommended time to consume Tomorrow Cellars to ensure they are as fresh and delicious as intended.
