From Our Table to Yours: Holiday Dishes to Pair and Share
Tomorrow Cellars wines offer the full experience of traditional wine—just without the alcohol. Since one of our favorite ways to enjoy wine is with food, we crafted our release collection with an eye towards food friendliness.
With the holiday party season in full swing, we've been busy creating our go-to party appetizers and experimenting to find the perfect pairings for our Rhône Blanc and Sparkling Blanc de Rhône.
Knowing how challenging it can be to find the ideal dish to bring to a gathering, we’ve curated a list of favorite recipes from our family and friends. Naturally, we think these appetizers are best enjoyed with a chilled glass of our Rhône Blanc or Sparkling Blanc de Rhône. Enjoy!
Endive Bleu Cheese Crumble + Sparkling Blanc de Rhône
These are a holiday party staple from our co-founder Tracy Sweeney. The strong flavors from the blue cheese and fresh herbs are balanced beautifully by the crisp, citrusy flavors in our Sparkling Blanc de Rhône.
Ingredients:
8 ounces bleu cheese
1/3 cup olive oil
2 cloves of garlic, minced
1/2 cup chopped red onion
1/2 cup minced fresh parsley
2 tablespoons red wine vinegar
1 tablespoon lemon juice
Freshly ground pepper to taste
Red and white endive
Crumble the blue cheese evenly over the bottom of a 6x8 dish. Drizzle with a mixture of the olive oil and garlic. Then, combine the red onion, parsley, wine vinegar and lemon juice in a bowl and mix well. Pour over the layers of bleu cheese. Chill, covered for one hour.
Spoon even amounts of the mixture into the endives and sprinkle on fresh pepper.
Miso Mayo + Crudité + Rhône Blanc
Trust us on this one, your guests will be talking about this umami packed miso dip for weeks to come. Paired with crunchy crudité and a glass of Rhône Blanc, it’s a zippy way to get the evening started.
Ingredients:
2/3 cups aioli or kewpie Japanese Mayo
1/3 cup white miso
1 tablespoon sesame oil
2-3 dashes of sesame seeds
Dash of soy sauce
Fresh ground pepper to taste
Whisk everything together and taste. Add more soy sauce for saltiness or pepper for spice as desired. Serve with a healthy variety of sliced radishes, carrots, cucumbers, baby bell peppers, and celery.
French Butter Anchovy Bites + Sparkling Blanc de Rhône
If you’re short on time but still want something elevated and a little different, these anchovy bites are it. The quality of ingredients is key. Stop by your local specialty market to source high-quality French butter, bread and anchovies. We love these Cantabrian fillets that you can find at Whole Foods, or anything from Fishwife.
Ingredients:
1 crunchy baguette
2 tins of anchovies
1 block French butter
To assemble, simple slice the baguette into rounds, add a thin slice of French butter, and then top with an anchovy. The saltiness of the bites perfectly complements the freshness of our Sparkling Blanc de Rhône. Cheers!
Trout Rillette + Sparkling Blanc de Rhône
Can you tell we’re into tinned fish? This trout rillette is one of those dishes that tastes like you spent hours on it but in reality, requires very little work. Enjoy this with a chilled glass of our Sparkling Blanc de Rhône and your favorite crusty bread.
Ingredients:
1 tin of smoked trout (Trader Joes has a great one)
1 tablespoon of crème fraiche
1 tablespoon Dijon mustard
1 small shallot, minced
1 tablespoon capers
Half bunch dill, finely chopped
Salt and fresh ground pepper to taste
A few dashes of tabasco to taste
Mix everything together in a medium bowl and serve with bread or crackers. Enjoy!
