4 Steps to the Perfect Caviar Moment

Caviar has a reputation for being a little intimidating. Tiny spoons! Fancy tins! Words like beluga! But after conducting some very serious research over the weekend, we’re here to tell you that a great caviar moment can actually be quite simple.

You need something salty, something creamy, something crunchy or pillowy — and, very importantly, something bubbly.

Here’s what we learned.

1. Do I need the little pearl spoon?

No, absolutely not. But do we love the look of it? Absolutely yes.

Truly, any small scoop-shaped device will work. A small spoon or even a dull cheese knife is useful because it prevents you from accidentally taking a massive scoop. 

The traditional wisdom is to avoid reactive metals, which can interfere with caviar’s delicate flavor. So if you have a mother-of-pearl spoon, this is its moment. If not, don’t let that stand between you and your caviar.

2. Blinis vs. potato chips

There is no wrong answer here. We tried both, in the name of research.

Blinis are softer and more neutral, which lets the flavor of the caviar shine. They also make the whole experience feel a little more elegant.

Potato chips bring salt and crunch to the equation. The saltiness can compete with the caviar a bit, but the crunchy, creamy, salty combination is so delicious that we really didn’t care.

Our recommendation? Get both and conduct your own taste test.

3. What else do I need to complete the bite?

Something cool and creamy.

Crème fraîche is the classic, but we didn’t have any, so we used mascarpone — and it was delicious. A thick, tangy plain yogurt could work here, too. The goal is simply to add a creamy element that balances all that briny, salty goodness.

We also finely chopped some fresh chives to sprinkle on top, which was excellent and immediately sent us down a rabbit hole of other herbs we want to try.

Next time: dill.

4. Seriously, pair it with the Sparkling Blanc de Rhône

This might be the most important thing we learned.

Caviar is rich, salty and briny. Our Sparkling Blanc de Rhône is crisp, dry and refreshing, with fine bubbles and bright notes of citrus, pear and green apple. Each sip cuts through the richness of the bite and gets your palate ready to go right back in for another.

Salty, creamy caviar. Cold, crisp bubbles. Repeat.

There are some pairings you can overthink. This is not one of them.
